Croque Monsieur
The iconic French sandwich with an extra cheesy twist.
The croque monsieur is a grilled ham and cheese sandwich with a creamy topping. It appeared on a Paris café menu back in 1910, was first mentioned in literature by Proust in his epic oeuvre ‘In Search of Lost Time’ in 1918 and has remained a staple of the French kitchen ever since.
And what could be simpler and faster than preparing a croque monsieur? Much better when homemade, it can be enjoyed right out of the oven with a small salad. Our recipe of the croque monsieur is extra cheesy!

Ingredients:
For the sandwich
- 8 slices of soft white bread
- 600 g of fine ham
- 600 g of emmental cheese
- 40 g of butter
For the cheesy cream
- 16 cl of cream
- 120 g of emmental cheese
- 200 g of parmesan cheese
- 4 egg yolks
- ground pepper
Preparation:
1) Preparation of emmental and parmesan cream: In a bowl mix the cream, grate emmental and parmesan cheese. Add the egg yolk. Season with ground pepper.
2) Preparation of the croque-monsieur: Butter one side of a slice of bread, arrange 1 slice of ham 1 slice of emmental cheese, again 1 slice of ham and 1 slice of emmental cheese. Spread both sides of the second slice of bread with the emmental and Parmesan cream mixture.
3) Finishing and presentation: Brown the croque monsieur under the grill for 2 minutes. Serve with a side of green salad.
